The official start of Summer is just hours away! Every good celebration needs an excellent dessert…so how are you celebrating the beginning of the Summer season?

The way I see things, Summer desserts fall into 2 camps: cool and creamy or fruit pies. I save the cookies, cakes, and brownies for the rest of the year. A few weeks ago, I shared my recipe for 3-Ingredient Cherry-Chocolate Ice Cream and got a lot of feedback from you about that recipe. It’s truly a delicious recipe, but I received several (mild) complaints about the mess of using a food processor. I get it - sometimes you just want something simple and no-fuss! Fruit pies, in general, are a fuss, so I’ll leave them alone for now. Let’s focus on a very easy treat to welcome the heat!

Many of my baked goods feature the winning combination of chocolate and bananas - so naturally I wanted to put the two ingredients together again. Chocolate-Dipped Frozen Bananas are nothing new, but the way that I “decorate” them with chopped nuts and seeds turns them from ordinary to extraordinary with a healthful crunch! I’ve made these bananas several times recently and each time I’ve used different toppings. My husband prefers the crunch of almonds with the creaminess of the banana, but I like toasted chopped walnuts with my dark chocolate-covered frozen bananas (note - I ate the walnut variety before I snapped the photo!).

The hardest thing about the simple recipe is having the patience to wait for the bananas to freeze! Everything else is quick and allows the enjoyment of this feel-good treat in no time. This is the perfect dessert to enjoy outside, since it can be a bit messy if you let everything begin to melt (note - enjoy quickly, especially in hot weather)!

Chocolate-Dipped Frozen Bananas

Ingredients:  (note - use organic whenever possible)

2 bananas (ripe but still firm, no brown spots)

1/2 C chocolate chips (semisweet or dark)

1/4 C chopped nuts and/or seeds (sliced almonds, pepitas, walnuts)


Directions:

Line a rimmed baking sheet with parchment paper.  Peel the bananas and slice in half.  Place on the baking sheet and freeze until solid, at least 4 hours.  

Prepare the toppings.  If needed, chop the nuts or seeds, toast them if desired (allow to cool to room temperature).  

Once the bananas are frozen, create a double-boiler to melt the chocolate.  Put some water into a small saucepan and place a heat-proof bowl on top, making sure that the water isn’t touching the bottom of the bowl.  Pour the chocolate chips into the bowl and turn the heat on to medium.  Stir the chocolate until it is melted and smooth.  

Remove the bananas from the freezer and working quickly, dip them in the melted chocolate, leaving some of the banana exposed at the end.  Use a spoon to spread the chocolate to cover the banana, if needed.  Carefully put the dipped banana onto the lined sheet pan and sprinkle the nuts/seeds on top while the chocolate is still warm.

After all of the banana pieces have been dipped and decorated, return the sheet pan to the freezer to solidify the chocolate coating.  Enjoy!


Notes:

recipe yields 4 servings

freeze additional bananas, melt more chocolate, and use additional nuts/seeds as needed

to make dairy-free, use a dairy-free dark chocolate chip (such as EnjoyLife)

get creative with the toppings - chopped dried fruits and granola also taste great!
