Za'atar

Ingredients:  (note – use organic whenever possible)

1/4 C raw sesame seeds

2 T ground sumac

1/4 C dried thyme (or a mixture of dried thyme and oregano)

sea salt, to taste


Directions:

Heat a small skillet over medium heat.  Add the sesame seeds and toast, stirring frequently, until lightly browned and beginning to “pop”.  Watch the seeds closely, the burn quickly!  Remove the seeds from the skillet and allow to cool.

In a mortar and pestle (or a spice grinder), combine the sumac and dried herbs.  Be careful not to over-blend, keep some texture to the herbs.  Pour the sumac-herb mixture into a jar and add the cooled sesame seeds.  Shake to combine.

Taste the mixture.  Add sea salt, to taste, to your preference. 

Notes:

recipe yields several servings, depending on usage

can easily double or triple the recipe, although strength, flavor, and potency will diminish with the length of time it sits unused

customize your blend – add some cayenne pepper or dried chili flakes to add spice.  Add dried mint, in addition to or in place of, one of the other dried herbs.  Dried citrus peel is also a delicious addition.  There are probably as many za’atar variations as there are people in this world!
