Garlicky White Bean & Pumpkin Hummus
Ingredients: (note - use organic whenever possible)
1 1/2 C cooked white beans
1 clove garlic, minced
1 t freshly squeezed lemon juice
1 T Dr. Cowan’s Garden Pumpkin Powder
1/2 t sea salt
2 T extra-virgin olive oil
pinch of cayenne (optional)
Place white beans in the bowl of a food processor. Blend for a few seconds to break-up the beans. Add the remaining ingredients and blend until smooth, periodically stopping the processor to scrape-down the sides of the bowl.
Taste the mixture and adjust seasoning to taste, if needed.
Remove mixture from the food processor to a bowl, cover and chill for at least 1 hour to allow flavors to blend.
recipe yields 5-6 servings
add another clove of garlic, if desired, for a more pungent garlic flavor
recipe can be doubled, if needed, and can be made 2 days ahead of serving
