I'm going to keep this note short, as I'm getting ready to leave for spring break vacation with my family! Although I feel like 2018 just began, it's already March and time to get away for some relaxation and exploration. We are traveling to Portugal, a country that we've never visited, but are familiar with and excited to see in-person.
Many of you know that we are avid travelers. We take advantage of long weekends to leave home, and even longer breaks from my school to get further away. This time out of the house is so vital to me - it truly recharges me in so many ways. I'm able to reconnect with my family, since my household responsibilities of cooking, laundry, grocery shopping, and light housework aren't present when we're not in the house! Visiting other countries helps me to see the bigger picture of the world in which we live; I love to experience the sights, sounds, and especially the flavors of other cultures. While I do miss cooking and spending time in my kitchen when I'm away, I always return home energized with so many new recipe ideas. Once I'm fully resettled at home later this month, be on the lookout for some Portuguese-inspired recipes that I'll share with you.
When we travel, I always pack plenty of snacks along for the long airplane trip. I also pack our meals, if mealtime occurs during a flight, since I can't leave my growling belly (or my family's) to depend on airplane food! For today's flight to Lisbon, I've prepared lots of these Sesame-Rosemary Almonds. They're absolutely delicious, the perfect combination of savory and sweet, and the touch of herbaceous rosemary is spot-on, in my opinion. I bet we'll make the other passengers jealous when we start munching on these freshly-roasted almonds, while they're stuck with stale airline peanuts. As I believe, life's too short to waste on a mediocre snack or meal!

Sesame-Rosemary Roasted Almonds
Ingredients: (note - use organic whenever possible)
1 T maple syrup
2 T sesame oil
1/4 t kosher salt
1 T raw sesame seeds
1/2 t chopped fresh rosemary
1 1/4 C raw almonds
Preheat oven to 300 degrees. Line a baking sheet with parchment paper and set aside.
In a medium-sized mixing bowl, combine the maple syrup, sesame oil, kosher salt, sesame seeds and chopped fresh rosemary. Stir well. Add the almonds into the bowl and fold them into the mixture, making sure that each almond gets well-coated with the sesame seeds.
Pour the coated almonds onto the sheet pan. Spread them out so that they’re not touching each other.
Bake for 15 minutes, until the almonds are beginning to turn a darker brown caramel color, but are not burning. Remove from the oven, but allow to cool on the sheet pan for at least an hour.
Once cool, place in an air-tight container to keep crisp.
