How are you celebrating Mardi Gras? Not everyone can go to New Orleans to attend the parades. Chances are that you’re eating some Fat Tuesday-themed goodies, such as King Cake. I’ve never been to Mardi Gras or even tried King Cake – maybe the artificial colorings used to decorate the cakes is a bit too scary for me!
Navitas Naturals, the Superfood company that sells many of the ingredients which I use everyday, recently asked me for a Mardi Gras-themed recipe. I don’t know much about the holiday, but wanted to create a recipe that is both healthful and delicious. This recipe fits the bill, it’s full of Superfoods, homemade almond milk, and just a few other pantry ingredients. It’s a make-ahead treat, perfect for a breakfast on-the-go or an afternoon snack.
So what Superfoods was I able to sneak into this colorful creation?
Acai Powder – sourced from the Amazonian berry, this low-glycemic index fruit is full of antioxidants, fiber, and omega fatty acids.
Chia Seeds – used as an energy source by the Aztecs and Mayans, these seeds are full of omega fatty acids, protein, antioxidants and fiber.
Wheatgrass Powder – a very potent concentrated powder with over 70 minerals, vitamins, live enzymes, amino acids – very high in protein.
Goldenberries – a sweet-tart berry from Columbia, full of beta-carotene, vitamin A, and protein.
1 C homemade almond milk
2 T acai powder
1 t maple syrup
1/4 C chia seeds
1 C coconut cream (from one can coconut milk)
1/4 C coconut milk
1 t wheatgrass powder
1/4 C + 2 T oats (use GF if necessary)
1 t turmeric powder
1 t chia seeds
1/4 C goldenberries
1/2 C homemade almond milk
1 T maple syrup
Make the Acai-Chia Layer:
In a medium-sized bowl, stir together almond milk, acai powder and maple syrup until fully combined. Add chia seeds and stir to coat seeds with liquid. Cover bowl and chill for 4-6 hours.
Make the Wheatgrass-Coconut Layer:
Chill a can of full-fat coconut milk for 2 hours. Open the bottom of the can and pour-off the liquid into a measuring cup. Scoop the solid coconut cream into a medium-sized bowl. Use a fork to mash the coconut cream until it begins to soften. Add 1/4 C of the coconut milk and 1 t wheatgrass powder to the bowl and continue to mash-stir until everything comes together smoothly. Alternatively, put the coconut cream, coconut milk, and wheatgrass powder into a high-speed blender to process. Chill the coconut cream mixture until ready to make the parfait.
Make the Turmeric-Oat-Goldenberry Layer:
Place oats, turmeric, chia seeds and goldenberries into a medium-sized mixing bowl. Pour the almond milk and maple syrup into the bowl and stir to combine. Cover bowl and chill for 4-6 hours.
Assemble the Superfood Parfaits:
Have 2 glasses or jars (approximately 8-10oz) ready for assembly. Take the acai-chia mixture, wheatgrass-coconut cream and turmeric oats from the refrigerator and stir each bowl until the mixtures are smooth. Place 1/4 of the acai-chia mixture into the bottom of each glass/jar. Cover with 1/4 of the wheatgrass-coconut cream. Continue to layer the jar with the remaining acai-chia mixture and wheatgrass-coconut cream. Divide the turmeric oats between the two jars and place on top. Serve immediately.
Recipe yields 2 generous servings.
All components can be made a few days in advance. Keep covered in the refrigerator until ready to assemble and serve.
Make this recipe nut-free by replacing the almond milk with rice, hemp, sesame or oat milk. Replace coconut cream with a plant-based plain yogurt of choice.
